Overcooking due to time?

Iām looking at a brisket recipe for my first one with a slow cooker. The recipe calls for 6-8 hours on low, but I work 11 hour days. Can I totally botch the recipe doing this in a work day? Am I good to go or should I do this on a weekend? (Cooker only has Low, Medium, High, and Off settings)
