Too far gone???

So to follow up on a post of mine a week ago. I went on vacation and could not get a sitter. I returned to this mess. Apart from the mould which I new was there( hence the missing substrate) 1. Are the mushrooms too far gone or can you still use them after spawning? 2. Do you think it’s stalled?? I was hoping to cut out the mould and hope to get a few more pins. 3. Cut my losses and start again
