When is it time to pull?

This is my second attempt and so far it's proving well. But, I have a question. It's my fault for not paying more attention, but I started with 3 bags to innoculate. 2 had PE and the other had some sort of hybrid called Jedi Mind... One bag didn't make it. I'm guessing these are both PE? The last PE I was able to successfully grow were much shorter and fatter, and due to some timing issues, I had to pull them a bit earlier than I wanted (still didn't matter, they are still potent as hell). But with these, as you can see, they are much longer and have much smaller tops. When is it time to harvest these? I've never seen PE grow large caps or have a veil to open like some of the others I've seen on here.

Also, I know the setup doesn't look sterile or the best in general, but I had to improvise. The bags stalled and enclosing them in something that will help retain moisture worked last time, so I thought why the hell not, let's try it again. Obviously it worked. Anyways, thoughts on harvesting? I don't know if the tops are going to get much bigger. They keep getting taller, but that's it. Some are about to hit the top of the lid and I'm guessing that's not a good thing, is it?

Also, what are the thoughts on light? I haven't used any, and these grew. Would exposing them to some light help these caps grow perhaps? Pull some tall ones and start drying now? Then leave the little guys alone to grow some more? Any help is greatly appreciated!
