All in one bags vs grain only?

I DIYed some all in and normal grain bags - same strain but the grain only bags are growing much faster. Any explanation?
Also any reason the grain is on the bottom? Going to try grain on top/sub on bottom and check how that works - maybe more air if the grain is on top?
