Grow advise - notbfully colonizing

This is my first stab at growing. I have two monotubs with golden teachers. The spawn bags took forever to colonize but did. Then I mixed in the substrate (in late July or early August) and the first tub (pic 1) showed signs of colonizing but not fully. Some pinning and a few small mushrooms came up but that's all.

Second tub I mixed a month ago. I'm mmediately see mycelium growth in spots on the surface, now it has a few pins. Just like the first tub, I'm not seeing the mycelium colonizing the substrate evenly or fully.

What am I doing wrong people? Haha there is no visible contamination and it still appears to be hydrated though I'm sure at this point some moisture has been lost.
