What can I do from here

So I have an AIO bag. It's started fruiting but only in this one corner. 90% of the top hasn't been covered in mycelium. So I'm stumped what to do. I feel I have 2 options.
1. Harvest the big ones then close it and do another break and shake
2. Cut it open and just place it in a perlite shoebox.
Any other suggestions perhaps?
