Substrate and Spawn to Bulk Issues

I think I have narrowed my problems down to my substrate field capacity and sterilization methods. For reference, I am following PGT recipe for substrate currently (I have also tried 90-second mycology), and initially, I was sterilizing in the good ole oven. I get ok fruits, but my tubs (6qt shoebox) typically only fruit once then the cake seems to dry out beyond rehydration. I get a decent first flush and a few rogue sprouts here or there. I feel as though I have good genetics, but my field capacity seems to be either too dry. I think this is from using the oven method, but I just did the bucket Tek method and the current tub I have is moving extremely slower than the others. I am past two weeks from spawning to bulk and the mycelium has stopped a few centimeters shy of breaking the top of the substrate and does not look like the healthiest I have seen. I let it be a little more "wet" this time with not flowing water during a hard squeeze, but more than a couple drops like is recommended.

The other thing I want to ask about is how others' typical setup is when you are spawning to bulk. I use the UB TEK currently (even though I have a pressure cooker sitting in the box for the last two years I just haven't stepped to it for feeling that I can't get these bare basics down then I shouldn't be moving on). Right now what I do is put a light coating of substrate at the bottom of the tub and take one UB bag and break it up down to the grain. Mix in another light coating of sub and then I will mix all that together. I'll finish with about half an inch of substrate on top. Typical colonization times are about 2-3 weeks before fruiting, but my sub seems to be running out of juice before my fruits can really reach their full potential which results in one ok flush and some stragglers, but nothing that I would consider a proper second flush. This past cycle I got to the point of rehydration, but still seemed plagued by the substrate drying out. I will leave it in the dark corner of a room that I don't let too much light in and stays warm in between the 70-75 range on the coolest days and around 80 on the warmest. Fruiting conditions are done in a small green house tent with a vivosun fan (Setup for negative pressure, but for my next cycle I think I am going to try positive pressure to improve FAE) about six times a day for one minute.

Poke holes in my process. Any help is appreciated. Being able to produce a more consistent fruit using a more standardized process is my end goal. Would like to start a small farm operation one day, but right now just cultivating for fun and education. Thanks to everyone!
