Repeat shortcut until condition met

I connected my kitchen exhaust fan to a smart plug and set it to turn on when heat or humidity surpasses a threshold measured by an Aqara temp sensor; pretty simple. However turning it off takes forever if I have to wait for it to hit an arbitrary threshold. So I trying to make a shortcut that is triggered when my kitchen exhaust fan turns on and I’m very close but stuck on repeat. The automation gets the current temp when triggered burns it into a number and waits 60secs then checks the temp again converts it to a number and if the new value is lower it turns the fan off. If it’s not lower I want it to repeat the process starting at the wait command. How it’s currently written I think it will go back to the first get temp command. How can I control what repeats? Thanks in advance.
