So I am still new to sharpening my knives properly (though I am okay for a beginner). Unfortunately I lack a lot of knowledge around specific stones and the quality of them.
The stones I'm using right now are all from this company/brand. They seem to work well for me as a beginner, but I was curious if they were as good as they say they are. I have a 220 for reshaping or fixing family knives that have gone through the dishwasher. 1000 is my go to starting point for my knives (that get cared for) and a 4000 to finish.
Any advice would be great. Also, would a #400 diamond stone be a good flattening stone? I've heard those work well but just wanted to be sure.
