What should I use to sharpen this?

I already can a whetstone but only have a 1000 grit and I want to get it shaving hair and ideally have a mirror edge. Open to other sharpening systems too.

You dont even need 600 grit to get shaving edges, i used to only use 180 grit stones when i first started, to this day i can get a clean shave off that.
Use whatever works best for you, i personally dont go over 400 grit on pocket knives before stropping and they are way better than my polished edges
