In the overall scheme of things, I'm still a relative beginner (I've also only been doing this for around 3/4 months). However, I've been practicing a lot and I feel I'm at a point where I'm intermediate with my sharpening, in that I'm able to consistently make my knives sharp, and I feel that I have a good feel for what I need to do in order to make a knife sharp.
I've been using a Shapton 1000 up until now (it's the only whetstone I've used) and I was wondering if anyone had any recommendations on some other whetstones/grits I could use which could help me take my sharpening to the next level?
I was also considering getting a stone flattener, but not sure if a different whetstone would be a better investment.
This is purely for home kitchen use.
Aside from the whetstone, I currently use a makeshift leather strop I made from a belt, and I've made a wooden stand that goes on top of the sink. That's my equipment so far and it works really well.
