Advice for Gambeson

Hello all I’m looking for advice on making a Gambeson for SCA and can be used for rapier tournaments and such. I’ve found advice that canvas is a good material to make it puncture resistant, does anyone know if that needs to be the outer layer or if it can be an inside layer of the item? Thanks in advance
