Binder the day before ?

Hey , just a quick question regarding the process.
I am about to season 9kg of meat - 3 batches of chorizo, Italian and then a beef and cracked pepper.
Would I also add the milk powder and water the night before ? Or do I do that when I knead it before stuffing tomorrow ?
