Whatever the future of Star Wars holds, neither Rey nor anyone else will ever be a Jedi (see addendum below). This leads to the question: was Luke the last Jedi?
Although he was trained by Yoda and Obi Wan, it is my understanding that they focused his training on practical skills so that he could overthrow the Empire as opposed to the dogmatic and philosophical teachings of the Order. This is evidenced by his own decisions that were in stark contrast with what his Jedi teachers would have done, such as trusting in his friends and sparing his father.
Therefore, despite his adherence to many of their beliefs, it is reasonable to assert that Luke was not a Jedi. In line with this, Luke’s Order would have espoused beliefs that were not entirely orthodox for Jedi, further widening the schism between himself and the Jedi Order.
Interestingly, it is Luke’s lack of foundational Jedi philosophy and the apparent absence of his teachers post-RotJ that ultimately led to the termination of the Jedi Order. I claim that Yoda and Obi Wan were absent after the fall of the Empire because of Luke’s surprise to see Yoda in TLJ. If they were present, they could have completed Luke’s training so he could have become a Jedi. They could have also helped to train his students during the rebuilding of the Jedi Order. Further, they would have provided council to him when he was struggling to interpret Force visions.
Therefore, it is the assertion of this post that Luke was not the last Jedi. The title would fall either to Yoda or another Jedi spared by Order 66 who outlived him.
Addendum: There will never be another Jedi
Although we are not certain the contents of the books that Rey stole from Ach-to, they are implied to be religious texts scribed by Jedi of old. Similar to religious texts in our world, the words can only be properly interpreted through the lens of the culture who wrote them. Because of this, one would be unable to pick up a religious book and ascertain all the dogma of that faith—that is not the purpose of such books. Religions are perpetuated primarily through oral teachings, with writings present to aid in the retelling of stories. Since Force ghosts choose not to help train the next generation of Jedi, it is unlikely that Rey will accept help or be offered help from them moving forward.
The Jedi texts will not be an instruction manual on how to be a Jedi. They will contain phisophical verses on the nature of the Force as the Jedi interpret it. Despite her unnatural aptitude, she will be unable to interpret the words as a Jedi would; she will read them through the lens of her upbringing. When Rey inevitably trains a multitude of Force users, she will do so with her own interpretation of the Force—not those of the Jedi.
Conclusion: the Jedi are all dead, never to return. What awaits the future of the Force will be something else and should be given a new name.
Observation: not only has the ST soiled Luke’s legacy, they have effectively ended the Jedi lineage that has spanned millennia, and it can never be revived.
