I have learned how to sail in the last year through my colleges sailing team. In that time I have become quite hooked on sailing. I would love to purchase a sailing dinghy. However I live in a pretty land locked place. The nearest body of water is about 15 minutes away with no options for a ramp or boat storage. Is there any sailboats that would fit on a car roof rack or in a car and could be carried about 30 feet to the water single-handedly? I’ve looked into inflatables and they are quite expensive. And while wind surfing does seem cool the boards are often long and would be a hassle to secure. Im open to many ideas though!

For transporting it to/from the lake...yes. But you still have to get it between the car and the lake. I've seen people just carry a Laser over their heads, but I'm not strong enough to attempt that.]
But transporting the boat on a roof rack means you don't have to deal with a trailer (registration, lights, etc.) I used to transport my Laser on a roof rack with a Seitech dolly.
It's actually pretty easy to get a Laser (sunfish, etc) up on a roof rack even if you're by yourself. Keep in mind, you don't have to lift the entire boat at once...you just need to lift one end up onto the rack while the other end is on the ground. Then go pick up the other end and just walk the boat onto the rack. Set the dolly on top of the boat and strap everything down.
