round trip airline ticket for the trip back on a transatlantic

if i understand correctly what ppl do to save money over a one-way ticket is purchase a round trip ticket (from europe to the US) and then change the flight back to another date. (we would then fly there and cruise back since we would be vacationing at that time anyway)… is there an airline that allows for easy date changes over seas (like Southwest does domestically)?
