I say Let It Bleed is when they found their sound. Everything prior to that sounds like a blues song, country song, Beatles song, or something else. I think on Let It Bleed, they figured out how to take all that inspiration from the blues and country, and fuse it with rock ā€˜nā€™ roll, and voila, you have brand new, unique sound called The Rolling Stones.
