Planning on roadtripping from NJ to CO in a few weeks, any good places to stop in Kansas?

Going from NJ to pick up some friends at college in Colorado Springs. We're planning to drive through to St. Louis, MO and stop there for the night, and have plenty of ideas of places to stop and friends to see up until there. The only state where there seems to be a big gap between places to stop is after Topeka, there seems to be nothing for a while. I-70 seems to be the fastest route (and we'll be in a wee bit of a rush), but I've also heard it's the dullest. Any tips on places to stop between Topeka and Colorado Springs?
