Best method for cooking fries?

So the few methods I’ve tested

Rinse and cut potatoes, then soak in cold water overnight, fry once until 80% cooked, cool on tray in fridge until ready to order, once ordered fry a second time for a few minutes at high tempt until brown and crispy.

Rinse and cut, soak for half an hour in cold water, fry once until 80% cooked, cool on tray in fridge until ready to order, once ordered fry a second time for a few minutes at high tempt until brown and crispy.

Rinse and cut, fry at low temp until 80% cooked, soak in cold water for half an hour, fry again at high tempts.

Rinse and cut, drop into fryers at low tempt until about half cooked, lay out and refrigerate until ordered, fry again at high tempt.

I’ve found all 4 provide good tasting fries. I’m curious what method you use and believe is best?
