Not a lot to go on here, but please hear me out: I used to travel to Ft Smith to play with the symphony on occasion. It's been years since I've been able to go back, but we would always eat at this restaurant called "Rolando's". They have this dish called "El Plato Cubano" that they describe thusly:
"Castroโs favorite โ Black beans and rice with cheese, mixed vegetables, red onions, sour cream and guacamole"
Whether or not this is Castro's favorite, this dish is one of the most delicious meals I've ever had. Black beans I understand. Rice, got it. Pork, sure we can do that. But it's the rest of the ingredients that make it what it is, and I'm not good at being able to figure out even simple ingredients in my meal. There is some sort of grated cheese, veggies I don't remember, and this hot sauce draped in ribbons across the plate. Here is an image from the website.
I realize that if you haven't been there and tried it, you can't tell me what's in it, even based on my resplendent description. But I am curious if anyone has a recipe that looks similar. I've tried it myself a few time with disastrous results but have not yet given up hope.
