Help planning a weekend of meals for one

So I'm on call this weekend (IT Support) and have decided that I don't want another typical weekend full of instant food like oven pizza or microwaveable curry meals.

During the week I spend time with friends/family and cooking full meals is easier - cooking for one is something I don't do very often at all.

So I'm calling on you, /r/recipes, to help me out with a weekend of recipes which meet the following criteria:

  • Meals for Friday dinner, Saturday breakfast, lunch and dinner, Sunday lunch and breakfast.
  • Prep time for each meal can be any length, as long as I can put the knife down to answer a call and come back to it later.
  • Cooking time for each meal should be no more than 40 minutes, with the ability to step away for 5 minutes if necessary. Recipes with a pause/wait in the cooking times are also acceptable.
  • Similar veg across multiple meals - cooking for one has been hard in the past, due to vegetables being left over and wasted. I'm not a fan of that.

I'm willing to spend some cash on ingredients I don't already have and will buy in fresh meat/veg as required for your suggestions. These might be famous last words, but the only thing I don't really eat is fish (excluding salmon and tuna steaks), so anything else goes. I like spicy food, but it's not essential.

If there's interest, I can definitely provide pictures of the winning dishes as they're prepared/cooked :)
