Seeking advice on puppy chewing things

Our puppy is 11mo old, so hardly a puppy anymore. He's ALWAYS been really good about being in the house without supervision. Never chewed or destroyed anything to the point we would brag about him and felt comfortable leaving him free in the house at night and when we would go shopping.

Well, the past two months all that has changed. He chewed our entry rugs twice, as well as the corner of a larger rug in our office. Just this week he has destroyed two rubber doorstops, both within 30min of being left alone with the first time being when we were in our office with the door shut. When we got home and saw them, he immediately hunkered down and wouldn't look at us, so he knows when he does something wrong.

How do we combat this behavior? We currently will show him the object and say no very firmly then crate him for a bit, but I don't think that is working. We have bitter apple spray, but I don't really want to spray every small thing in the house. We are no longer leaving him free ranging when we aren't around, but that feels mean to him. It's really frustrating because he has tons of toys of all sorts for chewing and plays with our kitten. He also gets exercised plenty.
