What's your approach to dealing with businesses or organisations that request sensitive documents by email?

I'm talking about something like a bank requesting a scan of your passport or a hospital asking for a filled in medical form.
Do you bother asking for a way to securely transfer the documents? Most of the time they will probably say that there is no alternative.
Do you provide your own secure link to the files? What tools do you use? My concern with this is that people can be suspicious of links.
Any other ideas?
