Disabling third-party cookies, GDPR and the allow/disallow controls.

This may come as a dumb question, but after the arrival of the GDPR and the often ludicrous controls implemented, I've been thinking on the actual usefulnes of these menus, at least the menus that aren't an insult to the actual law.
Basically, most of these are third party cookies, right? Can I just forget about that hail of tracking bastards just by disabling them, or there's something else I'm forgetting?
