How much caloric surplus do you use?

After a decade in to lifting, I almost always gain more fat mass then desired during any given mass gaining stage. Doing a short cut now but ideally planning to go back to gaining from Sept until mid-spring. More interested in strength then aesthetics but at the same time don't want to go crazy. I'm estimating I should be down to 185 by the end of this cut? Tips?
