Over the past three years, I’ve naturally gone to eating more and more vegetarian meals and snacks.
While my ex would be buying steak, I would stick to chickpea salad and lentil soups to keep my budget in check.
This month has been a tight one. I had $20 to spend on food to the end of the month.
Eggs and pumpkin seeds have been amazing for keeping my protein up! (The pumpkin seeds were previously bought months and months ago from the dollar store).
I don’t buy processed meat replacements, and only get tofu on sale (and freeze it). I generally stick to legumes and peanuts (either chopped or in a sauce for a spicy pad Thai).
When my finances balance out, I honestly think I’ll keep eating this way. It’s made such an impact on my finances!
