I know every single grinder is different, but I recently picked up the Vario w and I'm really struggling to make a good cup. The grinds look perfect and uniform, but no matter which settings I try I feel like everything is under extracted. Right now I'm at about 3 M and the grinds look incredibly fine, almost like espresso but the taste is still lacking.

I was previously using the encore, and can still Make a decent cup using that when I get fed up with the Vario and go back to the Encore.

Using a V60 and the standard filters for reference.

A bonus question: how long does it normally take to grind 30 g with the W? For me, it seems to take forever, probably three times what it does with the encore.
