And more importantly, what effect does temperature have on brewing? I've been dealing with some horrible pour overs for the last few months and I've been trying to change different variables to get a solid cup. My most recent change was lowering the water temperature to around 202, and for some reason it seemed to have improved all my coffee greatly, but I really can't understand why. From everything I've read, seems like higher temperatures are the way to go, so I'm just curious if anyone knows why lowering the temp has improved my coffee
