How to introduce fish?

Building or rebuilding a small pond at a house we bought. Just cleaned it up, added the waterfall, and some landscaping. Now how would I go about adding fish? Is there a fish 101 post or article? So I need to cycle it somehow? I assume Shubunkin would be the best choice? How many is the right amount? I think itβs about 100-120 gallons?
