Currently record remotely, but want to record a roundtable. What equipment do we need/what's the best way? More details inside

Hey everyone - My co-host and I currently record remotely and it's been working great. When we interview people, they either also record their remote audio or I just bring them in with the Skype recording.

We're going to a convention in a few months, and are planning to play a few more social games with a group of people, including the designer of the game. It's going to be ~5 people, likely in a hotel ballroom. I may be able to get a smaller private room. I know there are lots of audio challenges and was wondering if there were any easy ways to go about this.

We currently each have a an ATR2100 USB/XLR. My current plan was to just set up our laptops in the middle of the table, with the mics pointing in opposite directions. I don't currently own a mixer, as we just use the USB feature of the mics.

This would be for a bonus episode, so quality isn't quite as important as it normally is, but given that it's a verbal/party/improv type game, I need everyone around the table to be understandable. Any tips?
