Would the envelope of a note reset if I press the key twice in a real piano?

I'm using "The Gentleman" library for Kontakt and I noticed that if I press the sustain pedal and play a note hard and while it's sounding I play the same note softer, then the first note keeps sounding on top of the second one.
I imagine that a plucked string definitely wouldn't work like that but I not so sure about a hammered string and I have no way to try it.
