How do you practice a song well enough to the point of not being able to play it wrong?

It takes preformance majors playing 8 hours a day on just one song but when ever I work on one measure of a fuge with each hand separate for 30mins each and then together by playing and just working on the fingering and not playing it wrong then turn the metronome on really slow and that I still find a little glitch.

How do you train your self to make it almost instinctual to play the next thing correctly, is it really just time and slow practice? Like spending two hours on just one hand on one measure on one fuge for 3 days in a row type of deal?
