Can grayscale be adjusted in Photoshop?

I have some photos that I wanted to convert from color to Grayscale, but when I converted them on the Fotor website they came out too dark, so I was wondering if Photoshop had the ability to convert color photos into very light grayscale?

Add a black and white adjustment layer, it will help you have sooooo much more control!
