Mice under / behind kitchen cabinets

Okay, I’m not sure what to do here. In a kitchen corner, we have a huge gap in between 2 cabinets. The mouse trap in the gap is from previous owners, so it was a problem area for them too. We sprinkled down baking powder because the smell in the kitchen is horrendous without a window open. I eventually got a snaking camera thing and shoved it down there just to find SO MUCH poop. https://imgur.com/a/9oH9JuX Some of it looks bigger than the mouse droppings too. This gap extends from right outside of the kickboard all the way back to the wall, then between the wall and the cabinet. I can’t get the camera to bend correctly to see where they’re coming from, but the trail of mouse turds continues back there. I’ve set a camera down there and saw mice come up from the gap and get killed by the snap trap, twice in the past month. A few months ago I found one in my kitchen and I figured it came out from that gap in the cabinets. I have 4 indoor cats and 3 are lazy. One of them tried to catch that one but was slow. I do have outdoor cats that hang out around the house and have seen them pouncing around in the yard at times.

A few questions - how do I get all the mouse shit cleaned up down in the gap and get the smell out of my house? What does a dead mouse smell like? Is it worth cutting some sections in my cabinet to follow the trail of mouse shit? I figured they could just be boarded up after we’re done, but I want to figure out how they’re getting in before closing it up. For reference we do live in the country and we bought this house last year.

I also found one in my attic and caught it too, have a camera up there and haven’t seen any since. None of the ones I have seen have gotten away so far. Thanks for your time.
