Budgeting with variable income

My wife and I have finally decided to buckle down and take control of our finances. Her paychecks every 2 weeks are always pretty close to the same amount. I, however, can have large swings in the amount I bring home every week. Some weeks I might only get 37-38 hours and some I get up to 55, causing my pay to vary by as much as $600 in a week. Do I use my average pay for income? Worst case and treat the excess as a bonus? We’ve never budgeted before and just thinking about it is overwhelming
