Profit taking strategies?

I invested in BTC and ETH a couple years ago. Its been up and down and there were times were I lost money and times were I gained. Right now, I have doubled my money.
My question is, what should be my profit taking strategy? Should I sell all my ETH or BTC, should I take out my principal and invest elsewhere? Should remove the principal in put that into a crypto ETF?
How should I think about reducing my risk?
