Build advice for a first time builder - new vs used

So ive made the decision to move away from my laptop (i7-8750H, geforce 1070 max Q, 16GB DDR4 RAM) to building a mid sized tower.

In doing so, I got quite excited and bought a Gigabyte RTX 3070. But that's it at this stage.

I'm looking to go down the route of a B550 motherboard with a Ryzen 5 3600. I've put a build together on pc part picker.

But my main question here is, besides the warranty, what are the main drawbacks for buying second hand parts? Is there anything in particular I should stay away from buying second hand or should I aim to get everything brand new?
