Just spent way too much money on a PC... what are some high end games I should play?

So I recently cashed out some AMZN stock and decided it was time I upgrade my 7 year old computer... I went all out. 1080ti with an I7 7700, all the bells and whistles. I can literally play anything recent on ultra but I have missed so much. What are some games over the last 4 years that I maybe missed due to hardware barriers that are absolute MUST plays.

I don't do racing or fighting but pretty much everything else is fair game. How can I best experience what this 1080 has to offer?

UPDATE: I have purchased the following titles on sale in the spirit of being a patientgamer:

Doom 2016

Witcher 3

Rise of the Tomb Raider

Shadow of Mordor

Deus Ex

Battlegrounds (because we all cheat once in a while)

Still on the fence about: Dawn of War 3 (lots of mixed reviews) Battlefield 1 (have it on ps4) Dark Souls 3 (waiting on a sale) Just Cause (waiting on a sale) GTA5 (just not really my cup of tea but some of you are swaying me)
