Mirror finish over a sable breton shell

For Christmas I plan on making chocolate mousse wrapped in a chocolate collar topped with a sable breton dome that's filled with orange curd. I want to give it a little color by putting a mirror glaze over the sable dome. Any suggestions on how to smooth out the dome before adding the glaze?
