Hey fellow pasta enthusiasts. I'm a 3rd generation pastaio and this is a cavatelli machine. With a dough that's cooperating I can turn out around 60 pounds an hour. It cuts 6 rows at a time (double sided, hard to see in the video). This dough consists of durum flour, egg, water, ricotta, & parsley.
