What am I doing wrong? - New to overclocking - PBO clocking

Hello All, I am hoping some brilliant person on here is going to tell me I am missing a button or something :')

System Specs

AMD Ryzen 7 5800x

AMD Wraith Prism RGB LED CPU Heatsink

MSI MPG B550 Gaming MB

Corsair CMK16GX4M2B3200C16 Vengeance LPX 16 GB

Crucial P3 Plus 1TB M.2

Samsung 1TB SSD

Nvidia GTX 1660 Super

750w Power supply (can't remember make)

So I have just built the above PC and everything is running fine so thought I may as well break it and over clock it! haha I joke.... Kind of...
I have fully overclocked my CPU and that is running fantastic with no issues! (Using MSI afterburner)

For overclocking the CPU (well not overclocking but PBO and boost) but following this I am setting the negative values at increments of 5 and then stress testing using both Cinebench and Prime95 at the same time.
I am currently at neg 25 with no issues or crashes, temps sitting at 80deg under full load

I am worried I am doing something wrong as in the video his fails at neg 15 on one core but all my cores are at neg 25 and no signs of issues.

Method:
Loading into Bios > advanced mode > Overclock > CPU advanced > PBO Manual > Per Core > make changes > F10 to save and restart.
