Finding the Right Balance Between Travel And Hiking

Fairly new to one bag packing and looking to make my first foray into one bagging for a 16 day trip to Peru which includes a 4 day Inca trail hike. Here are the many features I'm looking for:

Large enough to fit several days of clothes with packing cubes so not looking to have a ton of compartments. I've generally been targeting the 25-35L category.

Good aeration. I sweat like crazy at the best of times so would love for my backpack to minimize this problem as best as possible.

Enough versatility to be a light hiking back but still primarily function for travel in the city.

I really like a good water bottle holder especially for hiking as I like to constantly hydrate.

Things I don't need:

Laptop sleeve and tech organization. I generally don't bring my laptop on trips and my job does not require travel. An Ipad Kindle works fine for my needs and everything including my phone charges with a single cable. My general electronic setup is small charging pack Ipad Kindle Jabra earbuds.

Space for extensive hiking gear. I'm mostly looking at this for primarily city trips where I happen to go on small hikes as day trips rather than full camping. If I get more into camping I would invest into a more dedicated pack for that.

I'm not particularly big into photography so those feature don't appeal.

I don't need this to be an everyday backpack for me that's primarily my ortelib vario pack for the bike synergy so this really can be focused on travel exclusively

Budget is not a concern I'd rather pay for quality then be rebuying.

In terms of my personal ergonomics I'm a fairly wide person about 5'11" with 44 inch shoulders and a longer than average torso but overall light around ~ 160. Extra weight doesn't bother me much.

Some bags I've considered:

Aer Travel Pack 3 Small X-Pac: Would hit almost all my needs but might be a bit too urban/ bad for hiking? I'd love to hear from folks who have tried it.

ULA dragonfly: Seems like the ideal match but I have trouble finding any available for purchase.

Thule Subterra/Aion a bit of birds of a feather and would probably suit my needs but unsure about comfort.

Cotopaxi Allpa: Really like the aesthetic but just despise the lack of a water ball holder.

Would appreciate other thoughts/suggestions! Thanks!
