Well paid job but holy hell it's a dumpster fire here. What should I do?

So I recently joined a well funded non-profit with the intentions of doing some good work for the world and it doesn't hurt that they pay well too. However, holy hell it's a dumpster fire here! My day is filled with back to back pointless meetings and I barely have time to check my emails or do any work during the day. My managers are barely keeping up themselves, everyone is just stretched.

My day starts early and ends late. I'm hanging on as the money is good but I'm mentally not as psyched as before and the job market right now isn't great either. I feel really burnt out and it's only my 2nd month. The only thing keeping me going is that this job pays well enough to cover my mortgage payment.

I'm thinking of just doing the bare minimum while thinking of a Plan B. What would you do? Happy to hear some advice and opinions.
