Air Link is suddenly super choppy?

I've had my Quest 2 for about a month now, and over the last week Air Link has become almost unuseable. While playing any game, every minute or so I'll have some extreme lag that takes a few seconds to rubberband back. My headset is on a 5ghz band for my router, I'm the only one home and my desktop is hardwired to the router. I also have a 2070 that never had any issues running these game previously.
What settings should I be looking at to fix this issue?
