What is the healthiest way to incorporate red meat into your diet?

I keep coming across the opinion that in order to maximize the health benefits of a well-rounded diet, some degree of red meat is best (assuming veg and other lean meats like sockeye salmon are accounted for). Zinc, B12, iron, and other factors stand to benefit.
The thing is, it's unclear to me how much, to what frequency, or what kind is the best. My assumption is:
- Grass-fed, locally sourced beef
- Some kind of lean cut (unsure which exactly)
- Eating max once a week, maybe only once every two weeks
Can anyone provide insight?
