Salted honey soft serve

1 cup cream, whipped to medium peaks 200g sweetened condensed milk Scant 1/4 cup honey 1/2 tsp fleur de sel

Combine honey and condensed milk. Add salt. Fold through whipped cream. You will have a little bit more than 1 pint. Freeze. Spin on ice cream setting.

Consistency is like soft serve. Melts quickly. Flavour is HIGHLY dependent on the quality of the honey and salt chosen, hence the fleur de sel, but flakey sea salt like Maldon will also work.

I served it on top of a RIPE AF pear with a sprinkle of bee pollen.
