Hello from Canada!

My partner and I will be traveling from Queenstown up to Auckland in Mid/Late December. Specifically we'll be staying in Rotorua on Christmas Day and are looking for suggestions of what to do - although we understand a fair amount of places may be closed. We'll have a car so traveling shouldn't be too big of an issue.

Also open to suggestions outside of Christmas Day as well.

We'll be in New Zealand for about 18 days hitting up Queenstown, Christchruch, Willington, Rotorua, and Auckland for roughly 2 to 3 days at a time.

Also looking at getting a phone plan SIM Card that had decent data coverage for those 18 days.
