Possible to my own General Contractor in Jersey for a bathroom remodel?

I live in Essex county and looking to do a bathroom renovation.
I have gotten only about ONE decent quote on a bathroom remodel. However, I already know of an excellent plumber, framer, and electritian. Can I get my own quotes from each of those guys and have them each do the job or do I need a GC for this?
