Using a physical interface number vs an IP address when configuring Cisco devices

I've noticed that with many of the Cisco configurations you have the option to choose between setting a physical interface or an IP address when configuring certain functionality.
For example, when creating a GRE tunnel you can set the tunnel source as the interface number or you can use an IP address.
What are the pros and cons of each?
