Savate sauvage is a pure Mourvèdre… from the Roussillon… South of France.. and it’s just 11% alcohol… just look at the deep colour.. I’ve been drinking his wines for such a long time and when this vintage was just released (2020) it had a lot of carbonic gaz left from the fermentation but now it seemed to have disappeared which I felt a bit sad ahah cos I love the tingly feeling.
For people who doesn’t know about with some natural wines are a bit “fizzy” it’s because when the wine ferments it produce C02 and this C02 has the same property as the Sulfur (it protect the wine) so they bottle with a bit of C02 instead of bottling with a bit of sulfur
